Cooking Class | Sakura Matcha Mousse Cake

Today I will share simple recipe for those of you who are beginner in baking (same like me) and curious to try out simple recipe. If you dont have oven you can create your own crust to replace the green tea cake at the last layer. This is the final result of my trial and you can start preparing to bake.

Matcha Sponge Cake (1st Layer)

Ingredients:

Egg 1 nos

Sugar 30gr

Flour 30gr

Unsalted Butter 10gr

Milk 10gr

Matcha powder 2gr

*sift flour and matcha powder in advance

Steps:

1. Put egg and sugar in a bowl, mix until soft peak with an electric mixer

2. Add flour and matcha powder, mix with spatula gently. Add melted butter, milk and mix quickly.

3. Put in the cake mold, and bake for 10-12 minutes at 170 degree.

4. Cut the surface to flat (if you like), and put back in the mold.

Milky Mousse (2nd Layer)

Ingredients :

Full cream milk 190gr

Whipping cream 190gr

Sugar 50gr

Gelatin 12gr

Water 20gr

Strawberry syrup 10gr

Steps:

* add 20gr of water to gelatin powder

*prepare ice water

1. Put milk, 1/2 amount of sugar and melted gelation in a small pan. Heat to slightly boil, add gelation after turn off the heat, and melt it completely.

2. Then mix until slightly thick in the cold water bath with a spatula

3. Put whipping cream, strawberry syrup and 1/2 amount of sugra in a bowl and whip until soft peak.

4. Combine 1 and 2 and mix gently with a spatula until fold together.

5. Pour into the mold and chill until firm.

sakura Jelly (3rd Layer)

​Ingredients :

Water 70gr

Strawberry syrup 5gr

Sakura Flower 2

Agar powder 1gr

Steps :

1. Put water and agar in a small pan and boil to melt agar.

2. Add Sakura flower and strawberry syrup after turn off the heat.

3. Pour on the top of the milky mousse layer, and chill until firm.
